Slow Cooker Oatmeal

Ingredients


  • Unsalted Butter
  • 7 cups water
  • 2 cups steel-cut oats
  • 1 (14-ounce) can unsweetened coconut milk or 1 3/4 cups whole milk
  • 1/4 cup packed light brown sugar
  • 1/2 teaspoon fine salt
  • 1 teaspoon Vanilla Extract

Directions


Coat the insert of the slow cooker with a thin layer of butter. Add the water, oats, coconut or whole milk, brown sugar, and salt and stir to combine.
 

Cover and cook on low until the oats are cooked through and creamy, about 7 to 8 hours. Stir in the vanilla and serve immediately.

Variations: Add additional ingredients



Cherry Vanilla Oatmeal

2 - 3 T. Cherry Preserves
1 tsp. vanilla

Vanilla Spice Oatmeal

3/4 cup raisins
1/2 cup walnuts, chopped
Pinch of nutmeg
1/4 tsp cinnamon

Brown Sugar and Maple Syrup Oatmeal

1/4 cup more brown sugar
1/2 cup maple syrup

Blueberries & Cream Oatmeal (add while cooking)

1 cup frozen blueberries
Replace the water with: 6 1/2 cups water and 2 cups milk

Strawberries & Cream Oatmeal (add while cooking)

1 cup froze strawberries
Replace the water with: 6 1/2 cups water and 2 cups milk

Slow Cooker Chicken and Rice Casserole

Ingredients

  • 1 1/2 cups uncooked brown rice
  • 2 to 3 chicken breasts (depending on how many fit in the slow cooker)
  • 1 bag frozen broccoli, cooked
  • 5 medium carrots, sliced (don't forget to check the freezer)
  • 1 cup mushrooms, sliced or chopped (we've got dried mushrooms)
  • 1 cup sour cream
  • 1 cup  cream or milk
  • 1 1/2 cup chicken broth 
  • butter/shortening/coconut oil
  • cheese, optional
Directions

Grease your slow cooker so that the food will not stick to it when cooked. Evenly spread the uncooked rice on the bottom of the slow cooker. Next layer the chicken, broccoli, carrots, mushrooms, sour cream. Next pour around the edges of the slow cooker the milk and chicken broth. If you want a cheesy chicken and rice add cheese. 

Cook on low for 6 hours or until chicken is done. Shred the chicken with a fork and stir all to combine before serving.

Cornbread Muffin Mix

Ingredients


 Dry Mix

  • 2/3 cup whole wheat  flour
  • 1/2 cup yellow cornmeal
  • 3 tablespoons granulated sugar or less depending on taste
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil  

Add to make muffins:

  • 1 egg
  • 1/3 cup milk
  • butter/shortening/coconut oil (for greasing the pan)

Directions

Combine first 5 ingredients in a bowl, mix well. Making sure to get the lumps out and make it a smooth mixture. Store in airtight containers or ziplock bags. 

To make muffins:
Preheat oven to 400. In a mixing bowl add one bag of mix, egg and milk. Make sure to grease your muffin tin or use liners. Fill your muffin tin 1/2 full of mix.

Bake for 15-20 minutes or until golden brown. 
 

Cornbread Chili Bake

 Ingredients


  • butter/shortening/coconut oil (for greasing the pan)
  • 2/3 cup whole wheat  flour
  • 1/2 cup yellow cornmeal
  • 3 tablespoons granulated sugar or less depending on taste
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons vegetable oil 
  • OR 1 pkg Cornbread Muffin MIx
  • 1/2 cup frozen corn
  • 1 4oz can green chilies (or frozen green chilies from garden)
  • 1/2 cup sour cream or plain yogurt
  • 1 can chili
  • 1 cup cheese

Directions


Preheat oven to 375. In a small (8x8 glass baking dish) grease your dish. 

In a mixing bowl add together the first ten ingredients. (Everything but chili and cheese.) Spoon mixture into greased baking dish.



Spread chili evenly over cornbread. Top with cheese.

Bake in oven for 35 to 40 minutes or until bubbly and cornbread edges are browned. 

Slow Cooker French Toast

Ever in need of a good, warm breakfast the minute you get up in the morning? Ever feel so tired that you just don't think you can stand at the stove in the morning? Do you end up opting for cold cereal instead? (Not that that is a bad thing. We've definately ate our fair share of cereal in the mornings.)
 
But if you want to be able to give your family a good warm breakfast in the morning. You definitely need to try cooking in your slow cooker aka crockpot. I have to say that I am in LOVE with my slow cooker when it comes to morning breakfast. If it can cook while I sleep and give my family a warm, wholesome breakfast in the morning, what's not to LOVE about that? 
 
This is a favorite of our families. It's especially easy for the kids to throw together the night before.  I'm sure you'll notice on our blog that my kids help A LOT with cooking. It makes meal preparation time go so much faster and easier. Plus it gives the kids lasting memories, good preparation for life (cooking skills), and learning to work together (team skills).

Ingredients

1 Loaf of Whole Wheat Bread
           (This can be Whole Wheat Hot Dog Buns, Hamburger Buns, Cinnamon Raisin Bread,
             Homemade bread or just regular sandwich bread)
6 eggs
2 cups milk
1 tsp cinnamon
1 tsp real vanilla
1/2 cup raisins (optional: or you could try chopped dates)
butter/shortening/coconut oil

Directions

With your butter or other oil, grease your slow cooker. This will prevent the french toast from sticking. Place your bread in the greased slow cooker. If using add your raisins or dried dates.
In a mixing bowl mix together your eggs, milk, cinnamon, and vanilla. Pour over your bread and raisins.
To cook overnight, turn your slow cooker on warm. In the morning you will have a yummy warm, cooked breakfast waiting on you. If you don't have a warm setting on your slow cooker, cook on low for 2 hours or until done. If you are like me and don't want to get up just to turn on the slow cooker before breakfast time try purchasing on of these handy appliance timers.
